On our slopes of the foothills of Olympus, under the Mediterranean sun, an exceptional plant grows : the sacred thyme with purple and violet flowers of an exceptional aroma. Bright and floral, it has a sweet flavour with subtle acidic tones. Its finesse suggests sophisticated pairings: fresh fruits and fruit salads and lamb recipes.

Colour: light amber colour
Flavour: sweet persistent taste with subtle acidic tones
Crystallization: crystallizes spontaneously in a 5-8 months period.
Properties: rich in minerals and trace elements of potassium (kalium), magnesium, iron, phosphorus and sodium.

THE WILD HONEY STORY

Our honey is very rare, virgin forests where its harvesting takes place. The wide range of the mountainous altitude offer a rich diversity from a plethora of native plants in forest sites away from any human activity that could be detrimental to the environment. The main sources of nectar are the area’s plants such as a wild leaf, wild thyme, wild oregano, wild blackberry, oak, chestnut, pine and various thorns.
